Japanese Shrimp and Garden Pea Salad

I was given garden peas last week as part of my surprise ingredient series on YouTube, and this was my second and final attempt to impress the judge (AKA my boyfriend). You can see the first attempt here, but I ended up really enjoying this fancy shrimp salad! Too bad I can't have it every day... but I suppose I can have that sesame dressing whenever I want, it's too good not to!


This recipe is based on another recipe written in Japanese.



Makes 2 servings

Ingredients for this Japanese salad:

6 Whole tiger prawns

2 eggs

Garden peas around 30 to 40

Salt 1 tsp


Dressing:

Japanese mayonnaise 4 tbsp

Ground toasted sesame 2 tbsp

Soy sauce 1/2 tbsp

Rice vinegar 1/2 tbsp

Sugar 1/2 tsp

Water 1-2 tbsp



How to make this Japanese summer salad:

1. Add 1 tsp salt to a pot of water and bring to a boil. Add the peas and boil for just 30 seconds, then immediately remove into ice water to stop them cooking further.

2. Remove the top and vein from the peas and pat dry.

3. Poke a skewer through two sides of the prawns to give them a rounded shape (a toothpick would be best, my skewers made quite a big hole!)

4. Boil the prawns in the same water as the peas for 2 minutes. Remove to ice water.

5. Remove the heads and shells of the prawns.

6. Remove the “vein” of the prawns by slicing down the back and pulling out the black part.

7. Boil eggs for 10 minutes. Remove to ice water and peel off the shells. Cut into quarters.

8. Make the dressing by simply mixing all the ingredients together. If you have a mortar and pestle I recommend grinding your own sesame seeds, otherwise you can buy ground sesame!

9. Serve in as elegant a way as possible.
