Japanese Sweet Potato and Pork with Garden Peas

I've recently started a new series on YouTube where my boyfriend gives me a surprise ingredient and I have to make a dish with it on that day! For my first go, he gave me garden peas... I was expecting something a little more out there, but it turned out to be a bit of a challenge to really highlight them! This is my first garden pea recipe, and I'll be doing another one next week, so keep an eye out!


This recipe is based on another recipe written in Japanese.



Makes 4 servings

Ingredients for this pea surprise:

Pork (thin sliced rib) 225g

Japanese sweet potato 1

Snow peas / garden peas (known as "saya endou" in Japan) 500g

Soy sauce 1 tbsp

Sugar 2 tbsp

Red miso 2 tbsp

Water 100ml



How to make this pork and pea dish:

1. Cut the sweet potato into half-moon shapes, about 1cm thick, then soak in water for 5 minutes.

2. Place the peas in ice water for 5 minutes.

3. Remove the top and outer vein of the peas.

4. Add 1 tsp of salt to water, bring to a boil, then boil the peas for only 1 minute before returning to ice water to stop the cooking process.

5. Make the sauce by combining the miso, sugar, soy sauce, and water.

6. Cut the pork into bite-sized pieces, then cook on both sides with a splash of oil. (I did this in batches, then returned the meat to the pan)

7. Add the potatoes and sauce to the pan. Cook uncovered for 4 minutes, then covered for another 4.

8. Serve with a sprinkling of the cooked peas, and short-grain white rice on the side.
