Soboro don is a really easy Japanese dinner that you can customise with whatever meat and veg you want! Today I’m using chicken thigh that I’ll cut up myself, but you can replace it with pork mince, beef mince, or whatever you like.

Soboro Don chicken ingredients:
Chicken (thigh or minced)* ~210g

Ginger 1 inch
Sugar 1 tbsp
*Use a mixture of thigh and breast meat for a less fatty dish. I don’t recommend breast on its own as it can get quite dry.

Eggs 2
Sugar 1 tbsp
Soy sauce 1/2 tsp
3-4 spring onions
Benishoga (pickled ginger) as desired

Soboro Don Steps
1. Make the sauce for the chicken by combining soy sauce, mirin, sake and sugar.
2. Peel and grate the ginger.
3. Slice spring onion into fairly thin slices (thickness as desired - this will be a topping).
4. Mince the chicken thigh.
5. Add a teaspoon of oil to a pan, and cook the ginger on low heat for 30 seconds.
6. Bring the heat to medium/high and add the chicken mince.
7. Cook until chicken is no longer pink, then add sauce.
8. Cook until liquid is mostly gone. Set aside.
9. Combine eggs, sugar, and soy sauce. Mix together.
10. In a separate pan (or the previous one, cleaned so the egg doesn’t stick), add enough oil to coat the pan.
11. On a medium to low heat, add the egg mixture. I prefer some texture variation, so I wait until there is a light yellow rim around the edge, then stir. If you want more uniform crumbs of egg, start stirring immediately. Once you start stirring, keep stirring until the egg is cooked and in small pieces.
12. To serve, I first place the chicken in a neat line, then the eggs, then scatter my spring onions in the little indent created in between.
