How to make these matcha brownies

1. Preheat oven to 180℃.

2. Finely chop 35g of white chocolate for melting. The other 30g can be roughly chopped to use as chunks later.

3. Chop up butter to help it melt evenly. Combine butter and chocolate in a bowl and put in the microwave at 20 second intervals. Then mix when there are still some lumps, and it should turn smooth. (This is better than overheating it and having separated chocolate! I only did two microwave stints.)

4. Add both sugars to your butter and chocolate mixture. Combine with a hand whisk until homogenous but not fluffy.

5. Add egg and vanilla essence and combine with a hand whisk.

6. Add flour and matcha and mix with a rubber spatula until just combined. Do not over-mix.

7. Add white chocolate chunks now if using.

8. Pour batter into a lined or greased baking tin and sprinkle with pink salt. (Add a small pinch of other salt with the flour if you have no pink salt!)

9. Set the tin on a baking tray and bake in the oven for 25-30 minutes.

10. Let cool before removing from the tin and cutting into squares. Enjoy!
