I live in Japan, and haven’t been back to the UK in ages. It’s not like I used to eat crumpets and tea every day, but I did love crumpets and they’re impossible to get here! So I decided to make them myself…
Ingredients for these British crumpets:
Sugar 1 tsp
Bread flour 100g
Cake flour 50g
Warm water 200ml
Salt 1/2 tsp
Baking powder 1 tsp
Yeast 1 tsp
Warm water 3 tbsp
Butter as needed
How to make these crumpets:
1. Combine yeast and 3 tbsp warm water.
2. Combine all other dry ingredients and 200ml water in a separate, large bowl. Whisk for 2 minutes until smooth/
3. Add yeast mixture. Whisk for 30 seconds until smooth.
4. Cover with a damp tea towel and leave for 15-30 minutes in a warm place until foamy and ever so slightly risen.
5. Grease crumpet rings with a lot of butter, leaving no space uncovered.
6. Lightly grease the base of a dutch oven or pot with butter, then add the rings, cover and heat for 2 minutes.
7. Pour 40ml (60ml for thicker crumpets) of batter into each ring. Turn heat to medium high and cook for 30 seconds.
8. Turn down to medium low for 5 minutes, or until mostly cooked.
9. Remove the rings and flip the crumpets, cooking for 30 seconds - 1 minute or until golden brown.
10. Remove to a wire rack, then place in an airtight container in a cool dry place. Best served toasted the next day with a nice helping of butter.
